Server-side tagging has several advantages over a traditional tagging set-up.

Lose less data to ad blockers

Many users give you tracking consent but continue to keep their ad blocker on while browsing. These extensions often also block tracking scripts, resulting in incomplete data. Servers-side tracking solves this problem by moving these scripts into the cloud where ad blockers cannot block them.

Full control over data shared with third parties

You can choose to what extent you share user data with advertising & cross-site tracking vendors, increasing user privacy as screen size, URL and other identifiers  can be hidden.
